Ingredients

Scale

For the Bread

  • 4 slices sourdough bread (hoagie rolls or bread of your choice)

For the Cheese

  • 810 slices cheese (Havarti, Gruyere, sharp cheddar, mozzarella, all work well)

For the Meats

  • 1 lb deli sliced cold cuts: combination of turkey, turkey salami, turkey pepperoni

For the Spread

  • 5 tablespoons softened butter
  • 3 tablespoons freshly grated parmesan cheese
  • 1/4 teaspoon garlic powder

For the Veggie Dressing

  • 3 tablespoons mayonnaise
  • 1 tablespoon red grape juice vinegar
  • 1/4 cup parmesan cheese (divided & freshly grated)
  • 1/4 teaspoon garlic powder (divided)
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon freshly cracked pepper

For the Salad Toppings

  • 1/2 head iceberg lettuce (finely shredded)
  • 1/4 red onion (thinly sliced)
  • 1/3 cup banana peppers (chopped)

Instructions

  1. Prepare the Butter Mixture: Mix softened butter with 4 tablespoons grated parmesan cheese and garlic powder until well combined. Spread this butter mixture on the outside of each slice of sourdough bread to ensure a crispy golden crust when grilled.
  2. Assemble Your Sandwich: Place a single layer of cheese on the unbuttered side of a slice of bread. Layer on an assortment of turkey cold cuts followed by another layer of cheese. Optionally, add extra cheese between meats for more gooeyness. Top with another slice of bread, ensuring the buttered side is facing outward.
  3. Toast Your Sandwich: Heat a nonstick skillet over low heat. Gently place the assembled sandwich in the skillet allowing the cheese to melt thoroughly before the bread browns. Cook slowly for about 5-6 minutes per side, flipping only once, until both sides are golden brown and the cheese is melted inside.
  4. Make the Dressing: In a bowl, combine mayonnaise, red grape juice vinegar, remaining parmesan cheese, garlic powder, Italian seasoning, and freshly cracked pepper. Stir until smooth and adjust seasoning as preferred.
  5. Toss the Veggies: Add shredded iceberg lettuce, thinly sliced red onions, and chopped banana peppers into the dressing. Toss with tongs until all veggies are evenly coated with the creamy, tangy dressing.
  6. Serve: Once the sandwich is toasted to perfection, transfer it to a plate. Carefully open the sandwich to load it with the dressed veggie mixture (and optionally tomato slices). Close the sandwich, slice it in half, and serve immediately for the best flavor and texture experience.
