Caramel Topping

  • 20 caramels, unwrapped
  • 1 tbsp milk (whole milk recommended)

Chocolate Topping

  • 2 cups (400g) milk chocolate chips

Instructions

  1. Preheat Oven: Set your oven to 350°F (177°C) to prepare for baking the cookies.
  2. Cream Butter and Sugar: In a mixing bowl, beat together the salted butter and granulated sugar until the mixture is light and fluffy, ensuring the sugar is well incorporated.
  3. Add Egg White and Vanilla: Mix in the egg white and vanilla extract thoroughly until the dough is well combined and smooth.
  4. Add Dry Ingredients: Sift together the all-purpose flour and baking powder, then gradually add to the wet ingredients. Mix until the dough forms an even consistency without overmixing.
  5. Roll Out Dough and Cut Shapes: Roll the dough on a lightly floured surface until it reaches between 1/4 to 1/2 inch thickness. Use a round cookie cutter to cut out cookie shapes and place them on an ungreased baking pan, leaving some space between each.
  6. Bake Cookies: Bake in the preheated oven for 6-8 minutes. Remove the cookies from the oven when they are slightly puffy and not glossy, indicating they are fully baked yet soft.
  7. Cool Cookies: Transfer the baked cookies to a wire rack and allow them to cool completely to room temperature before adding toppings.
  8. Prepare Caramel: Microwave the unwrapped caramels with 1 tablespoon of milk for 1 minute, stirring halfway through at 30 seconds. Stir continuously until smooth and creamy.
