Cheesecake Layer

  • 80 g 0% Greek yoghurt
  • 20 g light cream cheese (Philadelphia active)
  • 15 g salted caramel protein powder
  • 30 ml espresso coffee

Instructions

  1. Prepare the Rice Cake Base: In a bowl, crush the 2 rice cakes into tiny pieces. Combine with 15 g salted caramel protein powder, 10 g cocoa powder, 1 tsp sweetener, and 120 ml almond milk. Mix thoroughly to form a base mixture.
  2. Transfer Base to Serving Glass: Spoon the rice cake mixture into a serving glass or mason jar, spreading evenly to create the base layer.
  3. Make Cheesecake Layer: In another bowl, mix 80 g Greek yoghurt and 20 g light cream cheese until smooth and free of clumps. Add 15 g salted caramel protein powder and mix until you achieve a runny, icing-like consistency.
  4. Add Espresso Coffee: Brew 30 ml espresso coffee and gradually mix it into the cheesecake mixture until it reaches a custard-like consistency.
  5. Assemble and Serve: Spoon the cheesecake custard over the rice cake base in the serving glass. Dust the top with cocoa powder and enjoy immediately or chill briefly if preferred.
