Ingredients

Scale

Rice

  • 1 cup uncooked white rice
  • 2 cups water or chicken broth

Meat and Seasoning

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 tbsp olive oil

Mix-ins

  • 1 can black beans, drained and rinsed
  • 1 cup corn

Toppings

  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheddar cheese
  • ½ cup salsa

Instructions

  1. Cook the rice: In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Stir in 1 cup of rice, reduce heat to low, cover, and simmer for 18 minutes until the rice is tender and liquid is absorbed.
  2. Prepare the meat: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef or turkey and cook, breaking it apart with a spatula, until browned and cooked through. Drain any excess fat if necessary. Stir in the packet of taco seasoning along with water according to the package instructions, and cook for another 2-3 minutes until the seasoning is well combined and the mixture is heated through.
  3. Combine ingredients: Add the drained and rinsed black beans and corn to the skillet with the cooked meat. Stir to combine and cook for an additional 2-3 minutes, allowing the flavors to meld and the beans and corn to warm through.
  4. Assemble bowls: Fluff the cooked rice with a fork and divide evenly among four serving bowls. Top each bowl with the seasoned meat mixture. Add diced tomatoes, shredded lettuce, shredded cheddar cheese, and a dollop of salsa on top for freshness and added flavor.

Notes

  • Use chicken broth instead of water when cooking rice for extra flavor.
  • For a healthier option, use ground turkey instead of ground beef.
  • Adjust the amount of taco seasoning based on your taste preference or dietary needs.
  • You can customize toppings by adding avocado slices, sour cream, or jalapeños.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
