Ingredients

Scale

Mushroom Mixture

  • 2 tablespoons extra virgin olive oil
  • 1.5 pounds white mushrooms, quartered
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 6 ounces cream cheese
  • ½ cup grated mozzarella
  • ¾ cup bread crumbs (divided)
  • ½ cup grated Parmesan (divided)

Topping

  • Remaining ½ of bread crumbs
  • Remaining ½ of grated Parmesan
  • 3 tablespoons fresh parsley, chopped
  • 1 ½ tablespoons butter, melted

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking.
  2. Prepare Mushrooms: Heat olive oil in a skillet over medium heat. Add quartered mushrooms seasoned with salt and pepper. Sauté until the mushrooms release their water and it evaporates, about 7-9 minutes.
  3. Add Garlic: Stir minced garlic into the skillet and cook for about 1 minute until fragrant but not browned.
  4. Combine Cheeses: Add cream cheese to the skillet and stir until the mushrooms are evenly coated and creamy. Remove from heat and fold in mozzarella cheese, half of the bread crumbs, and half of the Parmesan cheese.
  5. Transfer to Baking Dish: Spoon the creamy mushroom mixture into a greased casserole or baking dish, spreading evenly.
  6. Prepare Topping: In a small bowl, combine the remaining bread crumbs, Parmesan cheese, fresh parsley, and melted butter. Mix well and sprinkle this mixture evenly over the mushroom layer in the dish.
  7. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the breadcrumb topping is golden brown and crisp.
  8. Serve: Remove from oven and serve hot as a delicious side or vegetarian main dish.

Notes

  • Use fresh mushrooms for the best flavor and texture.
  • For a gluten-free version, use gluten-free bread crumbs.
  • You can substitute mozzarella with other mild-melting cheese if desired.
  • Make sure to not overcook the garlic to keep a mild, fragrant flavor.
  • Leftovers can be refrigerated for up to 3 days and reheated.
