These decadent S’mores cookie bars combine the classic campfire treat with the ease of a cookie bar. Cookie Dough

  • 1/2 cup Butter (softened, salted or unsalted)
  • 1/3 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 1/2 cup All-purpose flour
  • 1/2 cup Graham crackers (finely crushed, about 3.5 sheets)
  • 1/4 tsp Salt
  • 3/4 tsp Baking soda

Filling

  • 5 standard Hershey bars (milk chocolate)
  • 1 1/2 cup Marshmallow fluff

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and set aside.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is smooth and combined. Then add the egg and vanilla extract, mixing well until fully incorporated.
  3. Add Dry Ingredients: Gradually add the all-purpose flour, finely crushed graham cracker crumbs, salt, and baking soda to the wet mixture. Mix just until the dry ingredients are fully combined and no flour streaks remain, being careful not to overmix.
  4. Form Dough Layers: Press half of the cookie dough evenly into the prepared baking pan. Carefully remove the parchment-lined pan and place it in the freezer while you line the pan again with fresh parchment paper and press the remaining dough evenly onto it. This step helps maintain the dough’s shape for layering.
  5. Assemble Bars: Place the chocolate bars evenly across the dough in the pan, breaking them to fit if necessary. Spread the marshmallow fluff evenly over the chocolate layer. Then carefully flip the chilled cookie dough layer from the freezer on top of the marshmallow, working slowly to keep the top dough intact.
  6. Bake: Bake the assembled bars in the preheated oven for approximately 25 minutes or until the edges are golden and the bars have set.
  7. Cool and Serve: Allow the bars to cool completely in the pan to let the layers set properly. Once cooled, slice into bars and enjoy the gooey, chocolatey s’mores treat.

  • Using chilled cookie dough for the top layer helps prevent it from cracking or mixing with the marshmallow filling.
