For the Stew:

  • 1 rotisserie chicken white and dark meat shredded and skin removed

  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried thyme

  • 6 cups chicken broth
  • 1 can cream of chicken soup

For the Dumplings:

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 3/4 cup whole milk
  • 4 tbsp unsalted butter, melted

Instructions

  1. Sauté the Vegetables and Seasonings: In a large stockpot over medium-high heat, melt 2 tablespoons of butter. Add the frozen mirepoix blend, parsley, Italian seasoning, garlic powder, smoked paprika, dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook, stirring occasionally, until the vegetables begin to soften, about 3 to 4 minutes.
  2. Add Liquids and Chicken: Stir in the cream of chicken soup, chicken broth, and shredded rotisserie chicken. Mix well, bring to a low boil, then reduce heat to maintain a gentle simmer.
  3. Prepare Dumpling Dough: In a large bowl, whisk together flour, baking powder, and 1 teaspoon salt. In a smaller bowl or glass measuring cup, combine whole milk and melted butter. Microwave briefly to warm so they are similar in temperature, then whisk together. Pour the milk and butter mixture into the flour mixture and stir with a spatula until a smooth ball of dough forms.
  4. Drop Dumplings into Stew: Using a 1.5 tablespoon capacity cookie scoop, drop spoonfuls of dumpling dough into the simmering stew one at a time. The dough will make about 15 dumplings.
  5. Cook Dumplings: Cover the pot and let the dumplings cook undisturbed on low simmer for 25 minutes until cooked through.
  6. Serve: Serve the chicken and dumplings hot immediately after cooking.
