Ingredients

Scale

Shrimp and Seasoning

  • 1 pound fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning

Pasta

  • 6 ounces fettuccini pasta

Vegetables and Sauce

  • 1 tablespoon butter
  • 3 cups fresh mushrooms, sliced
  • 1 tablespoon chopped shallots
  • ⅔ cup chicken broth
  • ½ cup sour cream
  • 1 tablespoon cornstarch
  • 1 cup chicken broth
  • 1 (7-ounce) jar roasted red bell peppers, drained and chopped
  • 1 tablespoon drained capers

Instructions

  1. Prepare the Shrimp: In a medium bowl, combine peeled shrimp with olive oil and Cajun seasoning. Toss until evenly coated and set aside to marinate while preparing other ingredients.
  2. Cook the Pasta: Bring a large pot of lightly salted water to a boil. Add the fettuccini and cook for 8 to 10 minutes until al dente. Drain and set aside.
  3. Sauté the Vegetables: Melt butter over medium heat in a large frying pan. Add sliced mushrooms and chopped shallots, cook and stir until tender. Remove vegetables from the pan and set aside.
  4. Cook the Shrimp: In the same frying pan, add the seasoned shrimp. Cook for 2 to 3 minutes until shrimp turn pink. Remove from pan and set aside.
  5. Make the Sauce: Pour ⅔ cup chicken broth into the frying pan and bring to a boil. Cook uncovered until reduced to ¼ cup, about 2 to 3 minutes. Meanwhile, mix sour cream and cornstarch in a small bowl, stir in 1 cup chicken broth, then add mixture to the reduced broth in the pan. Cook and stir until thick and bubbly, then let simmer for 1 minute.
  6. Combine Everything: Return cooked shrimp, sautéed mushrooms, roasted red bell peppers, and capers to the pan. Stir well and heat through. Season with salt and pepper as needed.
  7. Serve and Enjoy: Serve the shrimp stroganoff over the cooked fettuccini for a creamy, spicy, and savory meal.

Notes

  • Ensure the shrimp are peeled and deveined for the best texture.
  • Adjust Cajun seasoning to taste for milder or spicier flavors.
  • Use fresh mushrooms for optimal flavor and texture.
  • The sauce thickens with cornstarch; stir continuously to avoid lumps.
  • Adding roasted red peppers and capers adds depth and a slight tanginess to balance the creaminess.
  • Serve immediately for best taste and texture.
