Shrimp Scampi
- 1 lb large shrimp (peeled and deveined)
- 4 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 cup dry white wine (or chicken broth)
- 2 tbsp freshly squeezed lemon juice
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley, plus more for garnish
- Salt and pepper to taste
Garlic Bread
- 4 thick slices of French or Italian bread
- Garlic butter (made by mixing softened butter with minced garlic and parsley)
- Prepare the Garlic Bread: Preheat your oven to 375°F (190°C). Spread the prepared garlic butter evenly over each slice of French or Italian bread and place them on a baking sheet.
- Bake Garlic Bread: Bake the bread slices for 8-10 minutes or until they are golden and toasted. Remove from oven and set aside.
- Cook the Shrimp: In a large skillet, heat 1 tablespoon of olive oil along with 2 tablespoons of butter over medium heat.
- Sauté Garlic: Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant but not browned.
- Season and Cook Shrimp: Season the shrimp with salt and pepper. Add them to the skillet in a single layer and cook for 2-3 minutes per side until shrimp turn pink and opaque. Remove shrimp and set aside.
- Make the Sauce: In the same skillet, add 1 tablespoon of butter and pour in the white wine or chicken broth. Let it simmer for 1-2 minutes to reduce slightly.
- Add Flavorings: Stir in the freshly squeezed lemon juice, optional red pepper flakes, and remaining butter. Mix until the butter melts and the sauce is smooth.
- Combine Shrimp and Sauce: Return the cooked shrimp to the skillet, tossing them gently to coat in the buttery garlic sauce.
- Garnish: Sprinkle chopped fresh parsley over the shrimp and stir gently to combine all flavors.
- Serve: Divide the shrimp and sauce evenly into serving bowls and accompany with warm garlic bread slices on the side. Enjoy your meal!
Notes
- If you prefer a non-alcoholic version, use chicken broth instead of white wine.
- Adjust red pepper flakes quantity to control spiciness or omit for a milder dish.
- For a gluten-free option, substitute the French bread with gluten-free bread.
- Use fresh garlic for best aroma and flavor.
- Serve immediately to enjoy shrimp at their best texture.
