Marshmallow Mixture

- 2 (10 oz) bags mini marshmallows, divided (1½ bags for melting, ½ bag for mixing in)

- Make the Marshmallow Sauce: In a large non-stick skillet or saucepan, melt the butter over medium-high heat, avoiding any scorching. Once melted, add 1 and ½ bags of mini marshmallows. Stir continuously until the marshmallows completely melt into a smooth, glossy mixture. Stir in the vanilla extract to enhance flavor.
- Fold in Dry Ingredients: Remove the pan from heat immediately. Quickly fold in the crushed Ritz crackers, stirring carefully as the mixture will be hot and sticky. Next, stir in the remaining ½ bag of mini marshmallows followed by about 75% of the unwrapped Rolos. Reserve the remaining Rolos for topping.
- Transfer and Decorate: Pour the sticky marshmallow-cracker mixture into the prepared pan. Using a buttered spatula, spread it out evenly. Press the reserved Rolos into the top gently before the mixture cools so they stick well.
- Cool and Serve: Allow the marshmallow treats to cool completely at room temperature, or speed up the process by refrigerating them. Once cooled and set, cut into squares and serve. Store leftovers in an airtight container at room temperature for up to one week.
