Ingredients

Scale

Cheeses and Dairy

  • 8 ounces goat cheese
  • 4 ounces cream cheese
  • ½ cup sour cream

Roasted Garlic

  • 1 bulb garlic
  • 2 tablespoons olive oil (plus extra for drizzling)

Flavorings

  • 1 teaspoon fresh lemon juice
  • Fresh herbs (Thyme, Rosemary, or Chives), chopped to taste
  • Salt and pepper to taste

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves, drizzle with 2 tablespoons of olive oil, then wrap tightly in aluminum foil. Roast for 30 minutes until the cloves are golden, soft, and fragrant. Let it cool before squeezing the roasted garlic cloves out of their skins.
  2. Blend the Cheeses: In a mixing bowl, combine the goat cheese, cream cheese, and sour cream. Use a hand mixer or food processor to blend until you achieve a smooth and creamy consistency without lumps.
  3. Add Roasted Garlic and Seasonings: Add the roasted garlic cloves, an additional drizzle of olive oil, fresh lemon juice, salt, and pepper to the cheese mixture. Blend again until all ingredients are well combined and the dip is smooth.
  4. Incorporate Fresh Herbs: Finely chop your choice of fresh herbs such as thyme, rosemary, or chives. Gently fold them into the dip mixture to retain their vibrant flavor and texture.
  5. Chill Before Serving: Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled with vegetable sticks, crackers, or bread for dipping.

Notes

  • For a dairy-free version, replace the cream cheese with a cashew-based alternative or add nutritional yeast to mimic a cheesy flavor.
  • You can swap out fresh herbs based on preference; basil or parsley would also work well.
  • Adjust the amount of roasted garlic based on desired intensity of garlic flavor.
  • Make sure to roast the garlic wrapped in foil to keep it moist and tender.
