These Keto & Gluten Free Zucchini Fries are a delicious, low-carb alternative to traditional fries. Coated in a crispy parmesan and garlic crust, they are perfectly baked to golden perfection and make a great snack or side dish. They’re easy to prepare with fresh zucchini and simple ingredients, ideal for anyone following a keto or gluten-free diet.

Ingredients

Scale

Zucchini Fries

  • 2 medium zucchinis, about 10 ounces
  • Few pinches of salt
  • 1 egg
  • ¾ cup freshly grated parmesan cheese (finely grated)
  • ½ teaspoon garlic powder
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius) and line a rimmed baking sheet with parchment paper to ensure even cooking and easy cleanup.
  2. Prepare Zucchini: Rinse the zucchinis and trim off the ends. Cut each zucchini in half lengthwise, then cut each half in half lengthwise twice more to create thin spears. Finally, cut each spear in half so they are a few inches long. You should have 16 spears per zucchini. Lightly season with salt and pat dry with paper towels to remove excess moisture.
  3. Prepare Dipping Mixtures: In a shallow bowl, whisk the egg until smooth. In a separate bowl, combine the finely grated parmesan cheese, garlic powder, and red pepper flakes if using.
  4. Coat Zucchini Spears: Dip each zucchini spear into the whisked egg, allowing any excess egg to drip off. Then roll the spear in the parmesan mixture, pressing lightly to coat evenly. Place coated spears on the prepared baking sheet spaced a few inches apart.
  5. Bake Fries: Bake the zucchini fries in the preheated oven for approximately 20 minutes or until golden brown and crispy. Baking time may vary slightly depending on your oven.
  6. Serve: Remove fries from the oven and serve immediately while warm. These zucchini fries are delicious with your favorite dipping sauce.

Notes

  • Use freshly grated parmesan cheese for the best texture and flavor instead of pre-grated cheese.
  • Patting the zucchini dry before coating helps the parmesan mixture stick better and prevents sogginess.
  • Adjust baking time depending on your oven’s temperature accuracy and thickness of the spears.
  • Red pepper flakes are optional but add a nice subtle heat.
  • Serve immediately for best texture as they may soften if left too long.
