Ingredients

Scale

Meatloaf

  • 2 pounds Ground Chicken (or lean pork/turkey)
  • 1 cup Parmesan Cheese, shredded
  • 1 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk (or plant-based milk)

Glaze and Garnish

  • 2 tablespoons Unsalted Butter
  • 1/4 cup Additional Parmesan Cheese
  • 2 tablespoons Fresh Parsley, chopped

Instructions

  1. Preheat Your Oven: Set your oven to 190°C (375°F). Line a baking sheet with parchment paper or grease a loaf pan to prevent sticking and ease cleanup.
  2. Combine the Ingredients: In a large bowl, gently mix ground chicken, Parmesan cheese, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and milk. Mix just until combined to avoid a dense meatloaf.
  3. Shape the Loaf: Shape the mixture evenly into a loaf using your hands and place it centrally on the baking sheet or in the loaf pan for uniform cooking.
  4. Bake the Meatloaf: Bake for 40 to 45 minutes until the internal temperature reaches 74°C (165°F), ensuring it is fully cooked yet juicy.
  5. Prepare the Garlic Parmesan Glaze: While the meatloaf bakes, melt unsalted butter in a small saucepan over medium heat, add a little minced garlic and cook until fragrant. Stir in the additional Parmesan cheese and chopped parsley and cook until slightly thickened.
  6. Glaze the Meatloaf: Remove the meatloaf from the oven and brush the garlic-Parmesan glaze generously on top. Return to the oven and bake for an additional 5 to 7 minutes until the glaze is golden and bubbly.
  7. Let It Rest: Remove from oven and let the meatloaf rest for about 5 minutes to allow juices to redistribute for moist slices.
  8. Slice and Serve: Slice into six portions, garnish with fresh parsley, and serve warm. Pairs well with mashed potatoes, roasted vegetables, or salad.

Notes

  • You can substitute ground turkey or lean pork for the chicken depending on availability or preference.
  • For a dairy-free version, use plant-based milk and dairy-free shredded cheese alternatives.
  • Adding shredded zucchini or chopped spinach can boost moisture and incorporate extra vegetables.
  • For a crispier crust, bake the meatloaf directly on a baking sheet instead of in a loaf pan.
  • Do not overmix the meat mixture to maintain tenderness.
  • Always use a meat thermometer to check doneness to ensure safety and juiciness.
  • Allow the meatloaf to rest before slicing to keep the meat juicy and facilitate cleaner cuts.
