Ingredients

Scale

Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil or favorite cooking oil
  • 23 garlic cloves, minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp low sodium soy sauce
  • 12 Tbsp sriracha
  • 23 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt, adjust to taste
  • 2 tsp corn starch

Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½1 Tbsp sriracha, adjust for spice level
  • 1 tsp rice vinegar
  • 2 tsp honey

Rice Bowl Options

  • Cooked rice (white or brown)
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado slices
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds

Instructions

  1. Prep Bang Bang Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and honey until smooth. Adjust spiciness by adding more sriracha or tone it down with extra honey or sweet chili sauce. Chill in the refrigerator until ready to serve.
  2. Prepare the Ground Turkey Mixture: Heat sesame oil in a large skillet over medium-high heat. Add ground turkey, breaking it into small pieces as it cooks. When the turkey is browned and reaches an internal temperature of 165°F, reduce heat to medium-low. Stir in minced garlic, grated ginger, smoked paprika, onion powder, soy sauce, sriracha, chicken broth, honey, black pepper, and sea salt. Simmer for 2-3 minutes, stirring occasionally.
  3. Thicken the Turkey Mixture: Sprinkle cornstarch over the turkey mixture and stir well to combine. Allow it to cook for an additional minute until sauce thickens. Optional: Stir in about 2 tablespoons of the prepared bang bang sauce for extra flavor right before serving.
  4. Assemble Rice Bowls: Lay cooked rice in bowls and add your choice of vegetables such as shredded carrots, cucumbers, edamame, pickled onions, avocado, and cabbage. Spoon the warm ground turkey mixture on top. Drizzle with additional bang bang sauce and garnish with sliced green onions and sesame seeds. Serve immediately.
