Beef Mixture

  • 1 pound lean ground beef
  • 1/2 teaspoon garlic powder
  • Kosher salt and freshly ground black pepper to taste
  • 1/3 cup thinly sliced green onions
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sriracha (optional)

Vegetables & Sauce

  • 1 tablespoon avocado oil
  • 1 pound shredded Brussels sprouts
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 cup sweet chili sauce
  • 1/2 of a lime, juiced
  • Sesame seeds for garnish (optional)

Instructions

  1. Cook Ground Beef: Add the ground beef to a large skillet and crumble it as it cooks. Add in the green onions and season with kosher salt, freshly ground black pepper, garlic powder, sriracha (if using), and soy sauce. Cook until the beef is fully browned and cooked through. Remove the beef mixture from the skillet and set aside on a plate.
  2. Sauté Brussels Sprouts: In the same skillet, add one tablespoon of avocado oil. Toss in the shredded Brussels sprouts and season with kosher salt and freshly ground black pepper. Sauté until the Brussels sprouts become soft and caramelized, stirring occasionally to ensure even cooking.
  3. Combine and Sauce: Return the cooked ground beef mixture to the skillet with the Brussels sprouts. Add the sweet chili sauce and lime juice, stirring everything together until the beef and Brussels sprouts are well coated with the sauce and heated through.
  4. Serve and Garnish: Transfer the stir-fry to serving plates. Garnish with sesame seeds if desired. Serve warm over steamed rice or your preferred side to complete the meal.

  • For a spicier version, increase the amount of sriracha or add crushed red pepper flakes.
