Ingredients

Scale

For the Kofta

  • 500 grams (about 1 pound) ground chicken
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 2 tablespoons olive oil (for grilling)

For the Garlic Yogurt Sauce

  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • Pinch of salt

Instructions

  1. Prepare the Kofta Mixture: In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, and fresh parsley. Add ground cumin, ground coriander, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Shape the Koftas: Wet your hands with water to prevent sticking, then shape the mixture into elongated oval shapes, typical for kofta, ensuring they hold together well.
  3. Preheat the Grill: Heat your grill or grill pan to medium-high heat. Brush the grill grates or pan surface with olive oil to prevent sticking and enhance flavor.
  4. Grill the Koftas: Place the chicken koftas on the preheated grill and cook for 5 to 7 minutes on each side. Cook until the koftas are golden brown on the outside and fully cooked through, reaching an internal temperature of 165°F (74°C).
  5. Make the Garlic Yogurt Sauce: In a small bowl, mix the plain yogurt with lemon juice and a pinch of salt. Stir well to combine and adjust seasoning if needed.
  6. Serve: Arrange the grilled chicken koftas on a serving plate and drizzle or serve alongside the garlic yogurt sauce. Pair with your choice of sides such as salads, rice, or flatbreads.

Notes

  • Using wet hands when shaping the koftas prevents the mixture from sticking.
  • Ensure the koftas are cooked through by checking their internal temperature for safety.
  • For extra flavor, add chopped mint or a pinch of chili powder to the kofta mixture.
  • The garlic yogurt sauce can be prepared ahead and refrigerated to allow flavors to meld.
  • If a grill is unavailable, you can cook the koftas in a lightly oiled skillet over medium heat until cooked through.
