Scale

Main Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup crumbled feta cheese
  • 1/4 cup olive oil
  • 2 large lemons, juiced
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the chicken.
  2. Prepare the Marinade: In a bowl, whisk together the olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and pepper until well combined.
  3. Marinate the Chicken: Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate to marinate for at least 30 minutes, or overnight for more intense flavor.
  4. Arrange Chicken in Baking Dish: After marinating, remove the chicken from the bag and lay the pieces in a baking dish. Pour any remaining marinade over the chicken evenly.
  5. Add Feta Cheese: Sprinkle the crumbled feta cheese evenly over the top of the chicken breasts.
  6. Bake: Place the baking dish in the preheated oven and bake for 40 to 45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the feta cheese turns bubbly and slightly golden.
  7. Rest and Garnish: Remove the chicken from the oven and let it rest for a few minutes. Garnish with freshly chopped parsley before slicing and serving with your favorite sides.

Notes

  • You can substitute feta cheese with goat cheese or a dairy-free alternative if preferred or if you have dietary restrictions.
  • Always check the internal temperature of the chicken to ensure it is cooked thoroughly without overcooking, which keeps the meat juicy.
  • Marinating overnight enhances the flavors but a minimum of 30 minutes is sufficient if short on time.
