Meatloaf Mixture

  • 450 grams ground chicken
  • 60 grams grated Parmesan cheese
  • 60 grams breadcrumbs
  • 15 grams fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 60 millilitres whole milk

Topping

  • 2 tablespoons extra virgin olive oil
  • 25 grams grated mozzarella cheese (optional)

Instructions

  1. Prepare oven: Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper to prevent sticking and allow for easy cleanup.
  2. Combine base ingredients: In a large bowl, mix together the ground chicken, grated Parmesan, breadcrumbs, chopped parsley, minced garlic, beaten egg, dried oregano, salt, and pepper until well incorporated.
  3. Incorporate liquids: Pour the whole milk into the mixture and gently combine until the mixture is uniform and holds together without being overly wet.
  4. Shape mini loaves: Divide the mixture evenly into four portions. Shape each portion into a compact mini loaf and place them spaced apart on the prepared baking sheet.
  5. Top and bake: Drizzle each mini loaf with olive oil. Optionally, sprinkle the grated mozzarella cheese over the tops for a cheesy crust. Bake in the preheated oven for 25 to 30 minutes, or until the meatloaves are golden brown and have an internal temperature of 74°C (165°F).
  6. Rest and serve: Remove the meatloaves from the oven and let them rest for 5 minutes to allow juices to redistribute before serving.
