  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Prep Potatoes: In a mixing bowl, combine the halved baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, Italian seasoning, paprika, salt, and black pepper. Toss well to coat evenly, then spread the potatoes onto one side of the prepared baking pan.
  3. Prep Chicken: Drizzle the chicken breasts with the remaining 1 tablespoon of olive oil. Rub them with the remaining garlic, a pinch of salt and pepper, and half of the Parmesan cheese. Place the chicken breasts on the other side of the baking pan next to the potatoes.
