Ingredients

Scale

Roll Ups

  • 4 large flour tortillas, about 12 inches in diameter
  • 8 slices provolone cheese, thinly sliced
  • 12 ounces deli roast beef, freshly sliced
  • 1 cup French fried onions, store-bought or homemade
  • 2 tablespoons extra virgin olive oil

Au Jus Dip

  • 1 can (10.5 ounces) beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) and line a rimmed baking sheet with parchment paper for easy removal and cleaning.
  2. Assemble Roll Ups: Lay one tortilla flat. On half of the tortilla, place 2 slices of provolone cheese, about 3 ounces of roast beef, and a generous handful of French fried onions. Lightly brush the inside edge of the tortilla with olive oil.
  3. Roll and Seal: Tightly roll the tortilla starting from the filled end, enclosing all fillings inside. Press the oiled edge to seal the roll. Place seam-side down on the prepared baking sheet. Repeat with remaining tortillas.
  4. Brush with Olive Oil: Lightly brush the tops and sides of each roll with the remaining olive oil to help achieve a crispy, golden crust.
  5. Bake: Bake the roll ups for 8–10 minutes, rotating the baking sheet halfway through if needed, until the tortillas are golden brown and the cheese just begins to bubble at the edges.
  6. Make Au Jus Dip: While the roll ups bake, combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Whisk well and heat over medium until it gently simmers for 3–4 minutes and the flavors meld.
  7. Rest and Slice: Remove the baked roll ups from the oven and let them rest for 2 minutes on a wire rack to allow the cheese to set. Then slice each roll into halves or thirds for serving.
  8. Serve: Arrange the sliced roll ups on a platter and serve immediately with the warm au jus dip for dipping.

Notes

  • For easier rolling and to prevent tortilla cracking, warm tortillas briefly before assembling.
  • Letting the roll ups rest before slicing helps keep the fillings intact.
  • Store any leftovers in an airtight container and reheat in the oven to maintain crispness.
  • Provolone cheese can be substituted with mozzarella or Swiss cheese depending on preference.
  • Check ingredient labels for allergens and consult a healthcare provider if you have concerns.
