Yeast Mixture

  • 1 teaspoon active dry yeast
  • 2 tablespoons granulated sugar

Dough and Seasoning

  • ⅓ cup (75 g) extra virgin olive oil
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • 2 ½ cups (312.5 g) all-purpose flour

Topping and Finishing

  • 2 teaspoons extra virgin olive oil, divided
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ cup (25 g) parmesan cheese, grated

Instructions

  1. Activate the yeast: In a large bowl, combine the warmed water, active dry yeast, and granulated sugar. Let the mixture rest for about 5 minutes until the yeast blooms and becomes frothy, indicating it’s active.
  2. Prepare the oil mixture: In a small bowl, whisk together the extra virgin olive oil, Italian seasoning, minced garlic, and kosher salt. This mixture will be used both in the dough and for coating the breadsticks.
  3. Combine yeast and oil mixture: Pour half of the prepared oil mixture into the bloomed yeast mixture and stir gently.
  4. Add flour and mix dough: Gradually add the all-purpose flour into the yeast and oil mixture. Stir well to combine until it forms a dough.
  5. Let the dough rise: Transfer the dough to a greased bowl, cover it with a clean towel, and place it in a warm spot for 1 hour or until it doubles in size.
  6. Preheat the oven: Once the dough has risen, preheat your oven to 450°F (232°C).
  7. Prepare the baking dish: Pour the remaining half of the oil mixture into a 7×11-inch baking dish and use a pastry brush to coat the bottom evenly.
  8. Shape and dimple the dough: Transfer the risen dough into the prepared baking dish. Press and work the dough outwards to the edges. Use your fingers to create characteristic dimples all over the dough’s surface.
  9. Cut the dough into breadsticks: Using a pizza cutter or sharp knife, make three equally spaced slices across the short side of the pan, then slice down the center lengthwise to create 8 breadsticks in total.

  11. Bake the breadsticks: Place the baking dish in the preheated oven and bake for 18 to 20 minutes until the breadsticks turn golden brown.
