Dough

  • ⅓ cup (75 g) extra virgin olive oil
  • 1 tablespoon Italian seasoning
  • 2 teaspoons garlic, minced
  • ½ teaspoon kosher salt
  • 2 ½ cups (312.5 g) all-purpose flour

Topping and Finishing

  • 2 teaspoons extra virgin olive oil, divided
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ cup (25 g) parmesan cheese, grated

Instructions

  1. Activate the yeast: In a large bowl, combine the warm water, active dry yeast, and granulated sugar. Let it rest for about 5 minutes, until the yeast blooms and becomes frothy.
  2. Prepare the olive oil mixture: In a small bowl, whisk together the ⅓ cup olive oil, Italian seasoning, minced garlic, and ½ teaspoon kosher salt.
  3. Combine oil with yeast mixture: Pour half of the seasoned olive oil mixture into the yeast mixture and stir gently to incorporate. Set the remaining oil mixture aside for later use.
  4. Add flour to form dough: Gradually add the all-purpose flour to the yeast and oil mixture, stirring to combine. When the dough starts to come together, knead lightly until all flour is incorporated.
  5. Let the dough rise: Transfer the dough to a greased bowl and cover it with a clean towel. Place it in a warm spot and allow it to rise for about 1 hour, or until doubled in size.
  6. Preheat the oven: Set your oven to 450°F (232°C) so it’s ready when the dough is prepared.
  7. Prepare the baking dish: Pour the remaining oil mixture into a 7×11-inch baking dish. Use a pastry brush to coat the bottom evenly.
  8. Shape the dough in the pan: Transfer the risen dough into the prepared baking dish. Gently press the dough to spread it to the edges of the dish. Use your fingers to create characteristic dimples all over the surface.
  9. Slice the breadsticks: Using a pizza cutter or sharp knife, make 3 equally spaced cuts across the short side of the dough, then slice lengthwise down the center to create 8 equal breadsticks.
