Ingredients

Scale

Rice

  • 1 cup Minute Rice

Garlic Butter Shrimp

  • 6 tablespoons Unsalted Butter
  • 4 cloves Garlic, minced
  • 1216 oz Extra Large Shrimp, peeled & deveined

Creamy Sauce & Garnish

  • ¼ cup Shredded Parmesan Cheese
  • 3 tablespoons Skim Milk
  • 2 tablespoons Fresh Parsley, chopped
  • Salt, to taste
  • Fresh Ground Black Pepper, to taste

Instructions

  1. Cook the Rice: Prepare 1 cup of minute rice according to the package instructions. Once cooked, set it aside and keep warm, ensuring the rice remains fluffy and ready to combine later.
  2. Make Garlic Butter: In a large skillet over medium heat, melt 6 tablespoons of unsalted butter. Add 4 cloves of minced garlic and stir for 2–3 minutes until the garlic becomes fragrant and lightly browned. Watch carefully to avoid burning and lower the heat if needed.
  3. Cook the Shrimp: Add 12–16 ounces of peeled and deveined extra-large shrimp to the skillet. Sauté the shrimp for about 2 minutes, stirring frequently until they turn pink and opaque, indicating they are fully cooked.
  4. Combine Rice & Shrimp: Pour the cooked rice into the skillet with the shrimp and garlic butter. Gently stir to combine, making sure the rice and shrimp are evenly coated with the buttery garlic sauce.
  5. Add Creaminess: Mix in ¼ cup shredded Parmesan cheese, 3 tablespoons skim milk, 2 tablespoons chopped fresh parsley, and salt and pepper to taste. Cook for an additional 1–2 minutes, stirring occasionally, until the mixture is creamy and heated through.
  6. Garnish & Serve: Remove from heat and garnish with extra Parmesan cheese and fresh parsley. Serve immediately, optionally accompanied by lemon wedges for a bright, fresh finish.

Notes

  • Serve with a side of lemon wedges to brighten the dish!
  • Use fresh garlic for best flavor, but garlic powder can be substituted in a pinch.
  • Minute rice allows for quick preparation, but any quick-cooking rice can be used.
  • Adjust salt and pepper according to your preference.
  • For a richer dish, substitute skim milk with cream or whole milk.
