Ingredients

Scale

Main Ingredients

  • 2 cups all-purpose flour
  • 0.75 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup unsalted butter, melted
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract

Cinnamon Streusel Topping

  • 0.5 cup light brown sugar
  • 0.33 cup all-purpose flour
  • 1 tsp ground cinnamon
  • 3 tbsp unsalted butter, cold and cubed

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners to prevent sticking and for easy cleanup.
  2. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.
  3. Mix Wet Ingredients: In a separate bowl, whisk the melted unsalted butter, milk, large egg, and vanilla extract until the mixture is smooth and homogenous.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients bowl. Stir gently with a spatula or spoon just until combined. Avoid overmixing to keep muffins tender and light.
  5. Fill Muffin Cups: Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full to allow room for rising.
  6. Prepare Streusel Topping: In a small bowl, combine the light brown sugar, all-purpose flour, and ground cinnamon. Add the cold, cubed unsalted butter and use a fork or pastry cutter to blend the mixture until it forms coarse crumbs.
  7. Top Muffins with Streusel: Evenly sprinkle the cinnamon streusel topping over each muffin cup to add sweetness and crunch.
  8. Bake Muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool Muffins: After baking, allow the muffins to cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely before serving or storing.

Notes

  • Store muffins in an airtight container at room temperature for up to 3 days.
  • For longer storage, freeze muffins in a sealed container or freezer bag for up to 2 months.
  • Allow frozen muffins to thaw at room temperature or warm in the microwave before serving.
  • Ensure not to overmix the batter to prevent tough muffins.
