Ingredients

Scale

Meat and Vegetables

  • 1 lb ground beef (lean or regular)
  • 45 medium russet or Yukon gold potatoes, thinly sliced (about 1/8 inch thick)
  • 1 medium onion, chopped

Dairy and Cheese

  • 2 cups shredded cheddar cheese (sharp or mild), divided
  • 1/2 cup milk

Pantry

  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Garnish

  • Fresh parsley or chopped chives

Instructions

  1. Brown the beef and onion: Cook the ground beef and chopped onion in a skillet over medium heat, stirring occasionally, until the beef is browned and no pink remains, about 5-7 minutes. Drain excess fat thoroughly to avoid a greasy casserole.
  2. Prepare the potatoes: Wash and thinly slice the potatoes evenly to approximately 1/8 inch thickness. Even slicing ensures the potatoes cook uniformly without turning mushy in the crockpot.
  3. Layer the ingredients: In the crockpot, start by layering half of the sliced potatoes on the bottom. Next, evenly spread half the cooked beef and onion mixture over the potatoes. Sprinkle a portion of shredded cheddar cheese on top. Repeat the layers with the remaining potatoes, beef, and some more cheese.
  4. Mix and pour sauce: In a separate bowl, whisk together the cream of mushroom soup, milk, garlic powder, salt, and pepper until smooth and well combined. Pour this sauce evenly over the layered ingredients in the crockpot to add moisture and a creamy texture.
  5. Cook on low: Cover the crockpot with its lid and cook the casserole on the low setting for 6 to 8 hours, or until the potatoes are tender throughout and the cheese has melted and become bubbly.
  6. Add finishing cheese and herbs: About 15 minutes before serving, sprinkle the remaining shredded cheddar cheese evenly over the top of the casserole. Cover the crockpot again to allow the cheese to melt fully. Just before serving, garnish with freshly chopped parsley or chives for a burst of color and fresh flavor.

Notes

  • Use lean ground beef to reduce grease and fat content.
  • Try Yukon gold potatoes for a creamier texture or russet for a more traditional flavor.
  • Adjust salt and pepper to your taste preference.
  • If you prefer a thicker sauce, reduce the milk amount slightly.
  • The casserole can also be cooked on high for 3-4 hours, but low and slow yields best texture.
  • Garnish herbs are optional but add a fresh touch and visual appeal.
