Ingredients

Scale

For the Chicken and Sauce

  • 12 Tablespoons vegetable oil
  • Salt and pepper, to taste
  • 1.5 pounds boneless, skinless chicken breasts (about 2 large chicken breasts)
  • 4 ounces (½ block) cream cheese, softened to room temperature
  • 3 Tablespoons unsalted butter, softened to room temperature
  • 10.5 ounce can cream of chicken soup (low or no sodium)
  • 3 cloves garlic, minced
  • ¾ cup chicken broth (low or no sodium)
  • 1 (0.7 ounce) packet Good Seasons Dry Italian Salad Dressing Mix

For the Pasta and Garnishes

  • 16 ounce box angel hair pasta
  • Optional: chopped fresh parsley
  • Optional: cracked black pepper
  • Optional: grated Parmesan cheese

Instructions

  1. Heat the skillet: Place a skillet over medium-high heat and add the vegetable oil, swirling it to coat the bottom evenly.
  2. Sear the chicken: Season the chicken breasts generously with salt and pepper. Sear them in the hot skillet for 2 to 3 minutes on each side until they develop a golden crust. Remove from the heat and set aside.
  3. Prepare the sauce base: In a mixing bowl, whisk together the softened cream cheese and butter until smooth and creamy, ensuring no lumps remain.
  4. Combine sauce ingredients: Add the cream of chicken soup, minced garlic, chicken broth, and the packet of Good Seasons Dry Italian Salad Dressing Mix to the cream cheese and butter mixture. Whisk thoroughly until fully incorporated into a smooth sauce.
  5. Assemble in the crock pot: Lightly spray the interior of the crock pot with non-stick cooking spray. Place the seared chicken breasts at the bottom of the crock pot, then pour the prepared sauce evenly over the chicken.
  6. Slow cook the chicken: Cover the crock pot and cook on the low setting for 3 to 4 hours, or until the chicken reaches an internal temperature of 165°F (74°C) and is tender.
  7. Cook the pasta: About 10 minutes before serving, bring a pot of salted water to a boil. Add the angel hair pasta and cook until al dente according to package instructions. Drain and set aside.
  8. Serve: Serve the chicken whole or shredded atop the cooked angel hair pasta. Spoon the creamy sauce over the top and garnish with optional chopped fresh parsley, cracked black pepper, and grated Parmesan cheese as desired.

Notes

  • You can use chicken thighs instead of breasts if you prefer a richer flavor and more tender meat.
  • For a lower-sodium version, opt for no-salt-added chicken broth and cream of chicken soup.
  • This recipe can be made with other types of pasta such as spaghetti or fettuccine if you prefer.
  • Store any leftovers in an airtight container in the refrigerator; they will keep well for 3 to 4 days.
  • Avoid cooking on the high setting to maintain a better texture; always use a meat thermometer to check doneness.
