  • 1 medium red onion, finely diced (about ½ cup)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Additional Ingredients

  • 8 slices thick-cut bacon, cooked and crumbled
  • Green onion, chopped for garnish

Instructions

  1. Combine the main ingredients: In a large bowl, mix together the drained corn, rinsed black beans, mayonnaise, softened cream cheese, shredded mild cheddar cheese, shredded mozzarella cheese, grated parmesan cheese, finely diced jalapeño, cooked and crumbled bacon, finely diced red onion, kosher salt, and black pepper. Stir thoroughly until all ingredients are well combined and evenly distributed.
