Ingredients

Scale

Crust

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened shredded coconut
  • ½ cup unsalted butter, melted

Filling

  • 1 can (14 oz) sweetened condensed milk
  • 1 cup coconut milk (canned)
  • Zest of 2 limes
  • Juice of 2 limes
  • ½ cup granulated sugar
  • Pinch of salt

Whipped Cream

  • ½ cup heavy whipping cream

Garnish (optional)

  • Lime slices
  • Toasted coconut

Instructions

  1. Prepare the Crust: In a medium mixing bowl, combine graham cracker crumbs and shredded coconut. Pour in melted butter and mix until well combined and crumbly. Press the mixture firmly into the bottom of an 8×8 inch baking dish to form an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes or until golden. Remove and let cool.
  2. Make the Coconut Lime Filling: In a large mixing bowl, whisk together sweetened condensed milk, coconut milk, lime zest, lime juice, granulated sugar, and a pinch of salt. Mix until smooth.
  3. Whip the Cream: In a separate bowl, whip the heavy whipping cream with an electric mixer until stiff peaks form, about 3-5 minutes.
  4. Combine Mixtures: Gently fold the whipped cream into the coconut lime mixture until fully integrated and smooth.
  5. Assemble the Bars: Pour the coconut lime filling over the cooled crust, spreading it evenly. Smooth out the top with a spatula.
  6. Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4 hours or until fully set.
  7. Serve: Once set, remove the bars from the freezer and let them sit at room temperature for 5-10 minutes to soften slightly before slicing. Cut into squares and garnish with lime slices and toasted coconut if desired.
  8. Enjoy: Serve the bars chilled for a refreshing tropical treat.

Notes

  • For best results, use full-fat coconut milk to ensure a creamy texture.
  • Make sure to press the crust firmly to avoid crumbling when slicing the bars.
  • Allowing the bars to soften slightly before slicing will make them easier to cut.
  • To toast coconut: spread shredded coconut on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, stirring occasionally until golden brown.
  • Store leftovers in the freezer, covered tightly, for up to 1 week.
  • These bars are naturally gluten-free if using gluten-free graham crackers.
