Ingredients

Scale

Base

  • 3540 saltine crackers, broken into individual squares

Toffee Topping

  • 1 cup unsalted butter
  • 1 cup brown sugar

Chocolate & Peanut Butter Toppings

  • 8 oz semi-sweet chocolate chips
  • 4.5 oz peanut butter chips (Reese’s)

Instructions

  1. Prepare the baking tray: Preheat your oven to 350°F (175°C). Line a large baking sheet with aluminum foil or parchment paper and spray it with non-stick spray to prevent sticking.
  2. Arrange the crackers: Lay out the saltine crackers in a single layer on the baking sheet in neat rows. Break some crackers as needed to fill any gaps in the last row.
  3. Make the toffee: In a medium saucepan, melt unsalted butter on low heat. Once melted, add brown sugar and increase the heat to medium. Stir continuously as the mixture comes to a boil, then let it boil for 3 minutes until it develops a rich caramel color. Use a timer to keep track.
  4. Pour and spread toffee: Immediately pour the hot caramel toffee evenly over the arranged crackers. Quickly spread it with a spatula to cover all crackers before it sets.
  5. Bake the toffee-cracker base: Place the tray in the preheated oven and bake for 4-5 minutes or until the caramel begins to bubble, indicating it’s properly set.
  6. Add chocolate chips: Remove the tray from the oven and sprinkle the semi-sweet chocolate chips evenly over the bubbling toffee. Return the tray to the oven for an additional 2 minutes so the chocolate chips melt thoroughly.
  7. Spread melted chocolate: Take the tray out and use a clean spatula or knife to spread the melted chocolate smoothly over the toffee layer.
  8. Add peanut butter chips: Sprinkle the peanut butter chips on top of the melted chocolate and allow them to sit for 2 minutes to soften. Using the back of a fork, swirl the melted peanut butter chips through the chocolate for a marbled effect.
  9. Chill and set: Cover the entire tray with foil and refrigerate until the candy is fully set, or freeze for 15 minutes to speed up the chilling process.
  10. Serve: Once set, peel away the foil from the bottom to separate the candy from the tray. Break it into pieces and serve immediately or store in an airtight container for later enjoyment.

Notes

  • Australian readers can substitute saltine crackers with Salada crackers for authentic taste.
  • Ensure continual stirring during toffee boiling to prevent burning and achieve perfect caramel color.
  • Work quickly when spreading the toffee over crackers before it hardens.
  • Swirling the peanut butter chips creates a beautiful marbled effect and enhances flavor distribution.
  • Store leftovers in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
