Scones Ingredients

  • 2 ½ cups (320 g) all-purpose flour, plus extra for dusting
  • 1 tbsp (12 g) baking powder
  • 1 tsp (6 g) kosher salt
  • 4 tbsp (57 g) cold butter
  • ½ cup (60 g) shredded cheddar cheese
  • 2 tbsp (30 ml) chopped green onions
  • 1 cup (250 ml) plain Greek yogurt
  • ½ cup (125 ml) water
  • 1 tbsp (15 ml) cream, milk, or buttermilk for brushing

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside to keep the scones from sticking during baking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, and kosher salt. Stir together to blend evenly.
  3. Add Butter: Grate or cut the cold butter into small cubes and add it to the dry ingredients. Using your fingers or a pastry cutter, crumble the butter into the flour mixture until it resembles small pea-sized pieces. This helps create a flaky texture.
  4. Add Cheese and Green Onions: Stir in the shredded cheddar cheese and chopped green onions, distributing them evenly through the flour and butter mixture.
  5. Combine Wet Ingredients: In a separate bowl, whisk together the plain Greek yogurt and water until smooth. This mixture will provide moisture and tang to your dough.
  6. Form the Dough: Pour the yogurt and water mixture into the dry ingredients. Mix gently until the dough just comes together. Avoid overmixing to keep the scones tender.
  7. Knead and Shape: Turn the dough out onto a floured surface. Lightly dust the dough with flour and gently knead a few times until combined into a cohesive ball. Pat the dough into a smooth circle approximately 1 inch thick.
  8. Cut Scones: Using a sharp knife or bench scraper, cut the dough circle into 6 large wedges or 8 medium wedges, depending on your preferred scone size.
  9. Brush Tops: Lightly brush the tops of the scones with cream, milk, or buttermilk to encourage browning and a slight glaze during baking.
  10. Bake: Place the scones on the prepared baking sheet and bake in the preheated oven for 17 to 20 minutes. Bake until the scones are golden brown on top and cooked through.
  11. Cool and Serve: Remove the baking sheet from the oven. Slide the parchment paper with the scones onto a cooling rack or counter to cool slightly. Serve the scones warm with butter for a delicious treat.

Notes

  • This recipe was designed using thick Greek-style yogurt. If you use a thinner style of yogurt, you may need to adjust the amount of water accordingly to achieve the right dough consistency.
  • These scones are best enjoyed warm, fresh from the oven, but can be reheated gently before serving.
  • Brush with cream, milk, or buttermilk — whichever is on hand — to get a nicely browned top on the scones during baking.
  • For a dairy-free variation, substitute the butter with a vegan butter alternative and use a dairy-free yogurt.
