  • 1 tbsp olive oil for onions

  • ½ tsp granulated sugar
  • 2 tsp balsamic vinegar

  • 1 ½ cups Gruyère cheese, grated
  • 2 tbsp fresh thyme leaves, plus more for garnish
  • ¼ cup fresh parsley, chopped (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the squash.
  2. Prepare Squash: Cut acorn squash in half lengthwise and remove the seeds. Brush the cut sides with olive oil, then sprinkle with kosher salt and ground black pepper. Place the halves cut side down on a parchment-lined baking sheet.
  3. Roast Squash: Roast the squash in the preheated oven for 35 to 40 minutes, until the flesh is tender when pierced with a fork.
  4. Caramelize Onions: While the squash roasts, heat butter and olive oil in a skillet over medium-low heat. Add thinly sliced onions and salt, cooking slowly for 30 to 35 minutes until they become golden and caramelized.
