  • 1 cup milk or half-and-half
  • ¾ cup grated Parmesan cheese (freshly grated preferred)
  • 3 cloves garlic, minced
  • 2 tablespoons reserved pasta water (as needed to loosen sauce)

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package directions until al dente. Reserve ½ cup of the pasta water before draining the pasta, then set the pasta aside.
  2. Brown the Spiced Ground Beef: In a large skillet over medium-high heat, melt 1 tablespoon of butter. Add the ground beef and break it up with a spatula. Season with half the Cajun seasoning, salt, pepper, and red pepper flakes if using. Cook until the beef is fully browned and slightly crispy around the edges. Remove the beef from the skillet and set aside, leaving the drippings behind.
  3. Make the Creamy Cajun Alfredo Sauce: Lower the heat to medium and add the remaining tablespoon of butter to the skillet. Add minced garlic and sauté for about 30 seconds until fragrant. Add the softened cream cheese and stir continuously until it begins to melt into the butter and garlic.
  4. Incorporate Milk and Cheese: Slowly whisk in milk or half-and-half, stirring continuously to create a smooth, creamy sauce base without lumps.
  5. Add Parmesan and Seasonings: Stir in grated Parmesan cheese and the remaining Cajun seasoning. Allow the sauce to simmer gently for 2–3 minutes until it thickens slightly. Taste and adjust seasoning with salt, pepper, or extra Cajun spice as desired.
  6. Combine Beef and Pasta: Return the cooked ground beef to the skillet, then add the drained bowtie pasta. Toss all ingredients together to coat evenly in the sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach the preferred consistency.
