These easy-to-make truffles offer a perfect balance of spiced sweetness and chocolatey indulgence, ideal for festive gatherings, gifting, or anytime you crave a decadent seasonal dessert.

Ingredients

Scale

Truffle Base

  • 1/2 cup Biscoff spread
  • 1/2 cup Biscoff cookies, blended into crumbs
  • 1/4 cup full-fat cream cheese

Chocolate Coating

  • 2/3 cup chocolate (milk, dark, or white), melted
  • 1/2 tsp coconut oil, melted (optional)

Instructions

  1. Prepare Baking Sheet: Line a baking sheet with parchment paper and set it aside to prevent truffles from sticking.
  2. Mix Ingredients: In a medium mixing bowl, combine Biscoff spread, crushed Biscoff cookie crumbs, and cream cheese. Stir until the mixture is smooth and fully combined, forming a creamy, moldable base.
  3. Shape Truffles: Using your hands or a small scoop, shape the mixture into 8 to 10 small, evenly sized balls. Place them on the prepared baking sheet, then chill them in the freezer for 15–20 minutes or refrigerate for 30 minutes until firm to handle.
  4. Melt Chocolate: Melt the chocolate gently using either the microwave in 30-second increments, stirring in between, or by setting up a double boiler on the stovetop. Stir in the optional melted coconut oil to achieve a smoother, glossier coating.
  5. Coat Truffles: Using forks or spoons, dip each chilled truffle into the melted chocolate, ensuring it is completely coated. Lift and allow excess chocolate to drip off before placing them back on the parchment-lined tray.
  6. Set Chocolate: Return the chocolate-coated truffles to the freezer for 10 minutes or the refrigerator for 30 minutes to set the coating firmly.
  7. Store Truffles: Once set, store the truffles in an airtight container in the refrigerator for up to one week, or freeze for longer storage.

Notes

  • Ensure truffles are well chilled before coating to achieve a clean, crisp chocolate shell.
  • Use short microwave bursts or a double boiler to avoid burning the chocolate.
  • Add coconut oil to melted chocolate for a thinner, shinier finish.
  • Crush Biscoff cookies finely for smooth truffles or pulse less for textured bites.
  • Store truffles in airtight containers and separate layers with parchment paper if freezing.
  • Customize truffles with toppings like sprinkles, cocoa powder, or white chocolate drizzle for festive presentation.
  • Substitute vegan cream cheese and dairy-free chocolate for a vegan-friendly version.
