  • ½ cup vegetable oil
  • 2 large eggs
  • 2 teaspoons pure vanilla extract

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder

  • 1 tablespoon cinnamon

Instructions

  1. Preheat and Prepare Pans: Preheat your oven to 350°F (177°C). Grease and flour two 8″ x 4″ bread pans, then set them aside to be ready for the batter.
  2. Shred Apples: Using the large holes of a box grater, shred peeled apples down to the cores. Discard the cores and continue until you have 4 cups of shredded apple.
  3. Mix Apples and Sugar: In a large bowl, gently fold together the shredded apples and sugar. Let this mixture sit for 15 minutes to allow the sugar to dissolve and the apples to release juice.
  4. Add Wet Ingredients and Fruit/Nuts: Stir in vegetable oil, eggs, vanilla extract, chopped pecans or walnuts (if using), and dried fruit like raisins or Craisins until well combined.
  5. Combine Dry Ingredients: In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, kosher salt, cinnamon, and nutmeg to ensure even distribution.
  6. Mix Batter: Fold the dry ingredients into the apple mixture gently, mixing just until combined. Avoid overmixing to keep the bread tender.
  7. Fill Pans and Bake: Divide the batter evenly between the prepared loaf pans. Place in the preheated oven and bake for 55 minutes, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  8. Cool: Remove the pans from the oven and place on a cooling rack. Allow the breads to cool in the pans for 10 minutes, then carefully turn them out onto the rack to cool completely before slicing.
