Instructions

  1. Prep: Preheat the oven to 425°F. In a large bowl, whisk together the flour, baking powder, baking soda, sugar, salt, and the apple pie spices (cinnamon, nutmeg, ginger, cardamom, cloves) until well combined.
  2. Cut in Butter and Apple: Using a pastry cutter, fork, or your hands, cut the cold butter and grated apple into the dry ingredients until coarse crumbs form. When you squeeze a handful, it should stick together.
  3. Add Buttermilk: Gently fold in the chilled buttermilk with a rubber spatula until just combined. The dough will be wet and sticky.
  4. Flour Surface: Generously flour a clean work surface and keep additional flour nearby for dusting your hands and the dough regularly.
  5. Scatter Flour: Sprinkle flour over the dough in the bowl to help manage the stickiness. Incorporate any dry bits stuck at the bottom of the bowl back into the dough.
  6. Knead Dough: Turn the dough out onto the floured surface, flour your hands, and knead the dough a few times until it becomes easier to work with.
  7. Shape Dough: Pat the dough into an oblong oval about 1 inch thick. Fold the short ends toward the middle like folding an envelope to create layers. Press the dough down and reshape into an oval.
