Savory Slow Cooker Lipton Onion Potatoes are an easy and flavorful side dish perfect for any meal. Tender baby or Yukon Gold potatoes are slow-cooked with a classic Lipton onion soup mix, broth, and buttery goodness, delivering rich onion and herb flavors with minimal effort.

Ingredients

Scale

Potatoes

  • 2 pounds of baby potatoes or Yukon Gold potatoes

Seasoning & Broth

  • 1 packet of Lipton onion soup mix
  • 1 cup of beef broth or chicken broth

Butter & Garnish

  • ¼ cup of unsalted butter, cut into small pieces
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Potatoes: Wash the potatoes thoroughly and peel them if you prefer a skinless texture. Leaving the skins on works well for baby potatoes and adds a rustic touch.
  2. Layer Potatoes in Slow Cooker: Place the cleaned potatoes in an even layer at the bottom of the slow cooker for uniform cooking.
  3. Add Onion Soup Mix: Sprinkle the entire packet of Lipton onion soup mix evenly over the potatoes to infuse them with bold onion and herb flavors.
  4. Pour Broth: Pour 1 cup of beef or chicken broth over the seasoned potatoes to keep them moist and rich during cooking.
  5. Add Butter: Dot the surface of the potatoes with small pieces of unsalted butter. This will melt slowly and coat the potatoes with a creamy richness.
  6. Season and Cook: Add salt and pepper to taste. Cover the slow cooker with the lid and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the potatoes are tender when pierced with a fork.
  7. Finish and Serve: Once tender, check seasoning and adjust salt and pepper if needed. Garnish with fresh parsley for a bright, fresh touch before serving warm as a delicious side dish.

Notes

  • You can use either baby potatoes for bite-sized pieces or Yukon Gold potatoes peeled and halved.
  • For a vegetarian version, use vegetable broth instead of beef or chicken broth, but keep in mind Lipton onion soup mix may contain beef-derived ingredients.
  • Cooking times may vary depending on your slow cooker model; test potatoes for tenderness before serving.
  • Butter can be replaced with olive oil for a dairy-free option, though the flavor will differ slightly.
  • Garnish with fresh parsley or chives to add color and subtle herbal notes.
